Ingredients

  • 1 natural yogurt (125g).
  • 3 yogurt measures of plain flour. You can substitute it with rice flour or a gluten-free blend for a gluten-free option. Almond flour can also add a nutty richness.
  • 2 yogurt measures of sugar. Alternatively, swap it for coconut sugar or a low-calorie sweetener to reduce the sugar content.
  • 1 yogurt measure of ColaCao Original.
  • 1 yogurt measure of sunflower oil. For a change, you could use coconut oil or light olive oil to create a unique flavour profile.
  • 3 large eggs.
  • 1 packet of baking powder (approximately 10g).

Vegan option! Replace yogurt with a plant-based yogurt (e.g., soy or coconut), eggs with flaxseed or chia seed «eggs» (1 tablespoon of seeds + 3 tablespoons of water per egg). Our ColaCao is compatible with a vegan diet.

Step-by-step instructions

  1. Whisk eggs and sugar In a large mixing bowl, combine the eggs and sugar. Beat until the mixture becomes pale and slightly frothy. This step helps incorporate air, ensuring a light and fluffy cake texture.
  2. Add the remaining ingredients Gradually add the yogurt, sunflower oil, and ColaCao. Mix well until smooth. Then, sift in the flour and baking powder to avoid lumps. Mix gently using a whisk or a hand mixer on low speed until the batter is uniform.
  3. Prepare the cake tin Grease an 18cm (7-inch) round cake tin with butter or a plant-based alternative. Dust lightly with flour or line with baking paper to prevent sticking.
  4. Bake Preheat your oven to 180°C (356°F). Pour the batter into the prepared tin and bake for approximately 30 minutes. To check if it’s done, insert a toothpick into the centre; if it comes out clean, the cake is ready.
  5. Cool and serve Allow the cake to cool in the tin for 10 minutes before transferring it to a wire rack. Once completely cooled, dust with powdered sugar, cocoa powder, or decorate as desired.
